What keeps a hotel going is the fact that the employees take a genuine pride in their work, beastly and silly though it is.  ibid.  

 

The plongeurs, again, have a different outlook.  Theirs is a job which offers no prospects, is intensely exhausting, and at the same time has not a trace of skill or interest … All that is required of them is to be constantly on the run, and to put up with long hours and a stuffy atmosphere.  ibid.

 

The dirt in the Hotel X, as soon as one penetrated the service quarters, was revolting.  Our cafeteria had year-old filth in all the dark corners, and the bread-bin was infested with cockroaches.  ibid.

 

It was the typical life of a plongeur, and it did not seem a bad life at the time.  I had no sensation of poverty, for even after paying my rent and setting aside enough for tobacco and journeys and my food on Sundays, I still had four francs a day for drinks, and four francs was wealth.  There was – it is hard to express it – a sort of heavy contentment, the contentment a well-fed beast might feel, in a life which had become so simple.  For nothing could be simpler than the life of a plongeur.  He lives in a rhythm between work and sleep, without time to think, hardly conscious of the exterior world; his Paris has shrunk to the hotel, the Metro, a few bistros and his bed.  ibid. 

 

I was simply not equal to going on with a seventeen-hour day, though there are plenty of people who think nothing of it.  When one is overworked, it is a good cure for self-pity to think of the thousands of people in Paris restaurants who work such hours, and will go on doing it, not for a few weeks, but for years.  ibid.

 

The kitchen grew dirtier and the rats bolder, though we trapped few of them.  Looking round that filthy room, with raw meat lying among refuse on the floor, and cold, clotted saucepans sprawling everywhere, and the sink blocked and coated with grease, I used to wonder whether there could be a restaurant in the world as bad as ours.  ibid.

 

A plongeur is one of the slaves of the modern world.  Not that there is any need to whine over him, for he is better off than many manual workers, but still, he is no freer than if he were brought and sold.  ibid.

 

A plongeur is a slave, and a wasted slave, doing stupid and largely unnecessary work.  He is kept at work, ultimately, because of a vague feeling that he would be dangerous if he had leisure.  And educated people, who should be on his side, acquiesce in the process, because they know nothing about him and consequently are afraid of him.  ibid.

 

The most prosperous beggars are street acrobats and street photographers.  On a good pitch – a theatre queue, for instance – a street acrobat will often earn five pounds a week.  Street photographers can earn about the same, but they are dependent on fine weather.  ibid.

 

Yet if one looks closely one sees that there is no essential difference between a beggar’s livelihood and that of numberless respectable people.  Beggars do not work, it is said; but then, what is work?  A navy works by swinging a pick.  An accountant works by adding up figures.  A beggar works by standing out of doors in all weathers and getting varicose veins, chronic bronchitis etc.  It is a trade like any other; quite useless, of course – but, then, many reputable trades are quite useless.  ibid.

The majority of any society comprised, Smith knew, not landlords or merchants, but ‘servants, laborers, and workmen of different kinds’, who derived their income from wages.  Their welfare was the prime concern of economic policy, as Smith conceived it.  ‘No society can surely be flourishing and happy, of which the far greater part of the members are poor and miserable’, he wrote.  ‘It is but equity, besides, that they who feed, clothe and lodge the whole body of the people should have such a share of the produce of their own labour as to be themselves tolerably well fed, clothed, and lodged’.  The chief economic concern of the legislator, in Smith’s view, ought to be the purchasing power of wages, since that was the measure of the material well-being of the bulk of the population.  Jerry Z Muller, The Mind and the Market: Capitalism in Western Thought 

 

 

This is what the bourgeois political economists have done: they have treated value as a fact of nature, not a social construction arising out of a particular mode of production.  What Marx is interested in is a revolutionary transformation of society, and that means an overthrow of the capitalist value-form, the construction of an alternative value-structure, an alternative value-system that does not have the specific character of that achieved under capitalism.  I cannot overemphasize this point, because the value theory in Marx is frequently interpreted as a universal norm with which we should comply.  I have lost count of the number of times I have heard people complain that the problem with Marx is that he believes the only valid notion of value derives from labor inputs.  It is not that at all; it is a historical social product.  The problem, therefore, for socialist, communist, revolutionary, anarchist or whatever, is to find an alternative value-form that will work in terms of the social reproduction of society in a different image.  By introducing the concept of fetishism, Marx shows how the naturalized value of classical political economy dictates a norm; we foreclose on revolutionary possibilities if we blindly follow that norm and replicate commodity fetishism.  Our task is to question it.  David Harvey, A Companion to Marxs Capital
